These are pickled Cascabella peppers that are small, tart and crisp with a bright yellow colour.Picked by hand, the chilli peppers are brined in salt and water for a period of weeks and then finished with vinegar. Tart, crisp, and scoring between 1,500 and 4,000 on the Scoville scale. They have a cult following in the states and have been served at every In-N-Out Burgers in the USA for decades. Their spiciness cuts through the richness of a cheese burger briliantly. Other uses include condiments for fried chicken, deep fried chilli poppers, charcuterie boards, ploughman's lunch and cheese platters.
