Espinaler patatas fritas (fried potato chips) are the soul of any tapas. The secret is in the raw materials and the artisanal production process: the potatoes are collected in Soria between the end of summer and the beginning of autumn, and fried in pans in pure Spanish olive oil at an exact frying point, then seasoned with very little salt. The climate, the altitude and the exact point of ripening at harvest give Espinaler crisps its exceptional flavour.
